Ginger Tofu and Broccoli with Udon Noodles

Udon noodles are a wide flat noodle often used in Japanese cooking.  Cook according to package directions.  When 5 minutes of cooking time are left, add broccoli florets.  Drain and set aside.

Dice firm tofu, I used this brand.  Heat coconut oil over medium heat in a frying pan.  Add tofu.  After a few minutes of cooking, add the white part of chopped green onions, cayenne pepper and fresh ginger.  I have been using ginger from a tube like this brand.  Fresh grated has a stronger flavor, and requires more effort to prepare.

After a few more minutes, add thinly sliced garlic and soy sauce.  Taste and adjust seasoning if necessary.

Toss with noodles and broccoli and garnish with the green part of the chopped green onions.  An extra splash of soy sauce if needed.
